About mitt & trivet sets

Getting a hot dish out of the oven is only half of the job. The other half is having somewhere to put it down, and that is the half people improvise — a folded tea towel, a chopping board, a spare plate. A trivet is the piece of equipment that stops a worktop being marked, and it is the piece most kitchens do not actually own.

These sets solve that by pairing the mitts with two trivets in the same colour, so the thing you need second is already to hand and already out on the counter. The trivets are flat silicone with a raised pattern, which does two jobs at once: it lifts the pan base clear of the surface so heat is not conducted straight into the worktop, and it keeps the pan from sliding when you set it down at an angle.

In practice the trivets take more punishment than the mitts do. A mitt touches a hot surface for a few seconds; a trivet sits under a cast-iron pan for twenty minutes with the full weight and the full heat of it, over and over. Silicone is the right material for that because it does not scorch, does not absorb the grease that runs off, and wipes clean instead of staining.

Which one: The right set if you own mitts already but keep putting hot pans on the counter, or if you are buying for someone else — four matching pieces read as a present in a way two mitts do not.
